Blueberry Cucumber Shake
This smoothie of cucumber and blueberries is brimming with antioxidants. It makes a great start to any day for breakfast or a midmorning snack.
- Yield Serves 2
- 1 medium cucumber, peeled, seeded, and cut into 1-inch pieces
- 1 cup frozen blueberries
- 1 cup white grape juice or pear juice
- 1/2 cup low-fat plain yogurt
- Blend cucumber, blueberries, juice, and yogurt in pulses until the mixture fully integrated, but still thick.(Do not over mix because the shake will become watery if the cells of the cucumber are ruptured)
